Knead the mixture several times until it forms a ball, then let it rest. Depending on the flour's moisture content, you may need to add more water or flour accordingly. Once the dough has reached the desired consistency, cut it into smaller portions and roll it out thin enough to pass through the machine. For cutting noodles, we recommend setting the thickness to below 5 gear; settings above 6 gear are ideal for yielding dumpling wrappers.

Once the dough sheet is ready, switch the machine from pressing to cutting. The rollers will halt, allowing the cutting blades to engage.
